Staying healthy!
Eating right is one consideration for anyone who wants to stay healthy. It is well known that we Americans eat far too much processed food. Not only does the food lack vital nutrients but some are laced with chemicals. Yes I know the box says it is such a small amount it wont hurt. But have you ever considered the cumulative effect of what you eat? There is no doubt in my mind that more raw fruit, vegetables and grains would do wonders for any and all!

For those of you who are interested in pursuing healthful ideas here is a link that you will find very useful! Prevention Magazine is primarily written for women but has very useful information for men as well.


Recipe of The Month

This month's recipe is "Used with permission of the American Institute of Cancer Research "Visit their website for more healthful recipes.

Sweet Brussels Sprouts
10 oz. fresh Brussels sprouts
Water
2 tsp. olive oil
2 small shallots, thinly sliced
1/2 cup fat-free, reduced sodium chicken broth
1/8 tsp. nutmeg
Salt to taste

Remove any yellow leaves from sprouts and trim bottoms. Place steamer basket insude pot. Add about 2 inces of water. Place sprouts in steamer. Cover and steam on high heat about 10 minutes,until crisp-tender. (Sprouts also can be steamed in microwave oven in microwave-safe-cookware about 3 minutes.) Meanwhile, in medium skillet, heat oil. Add shallotes and saute about 2 minutes. When sprouts are done, add to shallots. Add broth. Cover and cook over medium heat 2 minutes, until broth is absorbed. Season with nutmeg and salt, to taste. Makes 4 serving.
